If you’ve ever craved that irresistible KFC flavor but wanted a healthier alternative, this oven-baked KFC-style chicken recipe is for you. It’s crispy, juicy, and packed with those Southern-style herbs and spices — all without deep frying. Perfect for family dinners, weekend meals, or meal prep!
Ingredients :
8 chicken drumsticks or thighs (skin-on for best crispiness)
1 cup buttermilk
1 ½ cups all-purpose flour
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried thyme
½ tsp dried basil
1 tsp salt
½ tsp black pepper
¼ tsp cayenne pepper (optional, for heat)
Olive oil spray or melted butter (for crispy finish)
Directions :
1• Marinate the chicken:
In a large bowl or zip-top bag, add the chicken pieces and buttermilk. Mix well, cover, and refrigerate for at least 2 hours, or overnight for deeper flavor and tenderness.
2• Preheat the oven:
Set your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with oil spray or cooking spray.
3• Prepare the seasoned flour:
In a large bowl, combine the flour, paprika, garlic powder, onion powder, thyme, basil, salt, black pepper, and cayenne (if using).
4• Coat the chicken:
Remove the chicken from the buttermilk, letting the excess drip off. Dredge each piece in the seasoned flour until fully coated. Gently shake off the excess flour.
5• Arrange for baking:
Place the coated chicken pieces on the prepared baking sheet, leaving space between each
6• Bake to perfection:
Bake in the preheated oven for 40 to 45 minutes, flipping halfway through, until the chicken is golden-brown and reaches an internal temperature of 165°F (75°C).
